Winter Salad with Golden Beets

Slightly sweeter than traditional beetroot, the golden beet is a wonderful additional to winter salads. This mouthwatering recipe is packed full of nutrients, and is topped with a sweet balsamic glaze and feta cheese.

Ingredients:
– 200g Golden Beets
– Handful Sun-dried Tomatoes
– 1 Small Red Onion
– 1 bag Rocket
– 70g Feta / Goats Cheese
– Pumpkin Seeds
– Olive Oil
– Balsamic Glaze

Method:
1. Preheat oven to 180 degrees
2. Wash (but don’t peel) golden beets, wrap them in kitchen foil then cook for 35 mins
3. Meanwhile, finely slice red onion and sun-dried tomatoes
4. Carefully toast the pumpkin seeds, in a pan on a medium-heat (no oil) for five mins
5. Once the golden beets have cooled, remove their skin and cut into small chunks
6. Layer the veg, then top with seeds, feta, olive oil and balsamic glaze

Homemade Pesto Recipe – with Sprouts Tops

Pesto is undoubtedly a fantastic addition to pasta dishes, and goes well with white meat such as chicken. This delightful pesto recipe is made from Brussels Sprouts tops, but can easily be replaced with Kale, Rocket, Kalettes or Basil.

Ingredients:
– 200g Brussels Sprouts Tops
– 80g Parmesan Cheese (or vegan alternative)
– Juice from 1 Lemon
– 160ml Olive Oil
– Pine Nuts (optional)
– Handful of Basil
– Handful of Parsley

Method:
1. Discard the stems from the leaves, and chop leaves into rough pieces then wash thoroughly
Note: Keep the stems for another recipe such as soup!
2. Add the sprouts tops into boiling water for 2 mins, then dry on kitchen towel
3. Blend sprouts tops in a blender until they form a paste
4. Add the juice from the lemon, parmesan, herbs, and half of the olive oil. Blend until all ingredients are mixed together
5. Depending on the texture desired, add more olive oil a little at a time, blending in between

Apple and Jerusalem Artichoke Salad with Beetroot and Carrots

Ingredients
– 2 small, raw Beetroots
– 2 Carrots
– 10 small Jerusalem Artichokes
– Hanfdful of Rocket
– 1/2 Apple
– Fresh Aromatic Herbs
– Handful of Mixes Nuts and Sultanas (optional)
– 4tbsp Olive Oil
– 2tbs Apple Cider Vinegar
– Salt and Pepper for seasoning

Method
1. Peel carrots, beetroots and Jerusalem artichokes
2. Grate carrots and beetroot
3. Slice artichokes and steam them for 15mins
4. Peel the apple and cut into square pieces
5. Wash the rocket then place onto a plate along with grated carrots and beetroot
6. Add the apple and artichokes
7. Top with seasoning, herbs, nuts and sultanas and dressing

Red Kuri Squash Risotto

Red Kuri Squashes are known for their unique shape and vibrant orange skin. However, when roasted they taste similar to Butternut Squash, albeit slightly sweeter. This recipe is quick and easy, and works wonders for either a hearty starter or main.

Ingredients
– 1 Red Kuri Squash
– 1 Large Onion / 2 Small Onions, finely chopped
– 50g Butter (or vegan alternative)
– 600ml Veg Stock
– 100ml White Wine
– 2 Garlic Cloves, crushed
– 150g Risotto Rice
– 1tsp Thyme
– Olive Oil
– Handful of Rocket to serve
– Parmesan to serve (optional)

Method
1. Pre-heat oven to 180degrees
2. Chop the squash into small chunks, removing skin and seeds
3. Drizzle olive oil over squash and roast in the oven for 30 mins
4. As the squash is cooking, add a generous lug of olive oil and half of the butter to a large pan, and add onions for 5mins on a medium heat
5. Add garlic, thyme and seasoning then continue stirring for a few minutes – making sure the onions remain translucent
6. Increase the heat and add risotto, continuing to stir for a further few mins
7. Add the wine until it bubbles away, reduce the heat and add the stock in intervals, waiting for the rice to absorb each time – this will take around 15 mins
8. Once the squash is roasted, add to the pan and stir in
9. Serve with rocket and parmesan

Salad Buddha Bowl

If you’re in a rush or bored of your go-to lunch, it’s time to add some colour to your plate whilst keeping it healthy! This Buddha Bowl is super easy, and by using mostly raw veggies, you’ll get the maximum amount of vitamins and minerals. (Plus, it looks great!).

Ingredients
– 1 Avocado
– 1 Carrot
– 2-3 Large Radish
– 1 Beetroot
– 80g Wild Rice
– 1 Bowl of Rocket Salad
– Handful of Goats Cheese (optional)
– Sesame Seeds
– Apple Cider Vinegar
– Olive Oil
– Salt & Pepper for Seasoning

Method
1. Start by cooking the wild rice (as per instructions) so that it will have time to cool when you’re preparing the veg
2. Steam the beetroot for 30 mins, then once cooled, peel and cut into small square pieces
3. In a pan, heat the sesame seeds for a few minutes (be careful not to burn them)
4. Peel and grate carrot
5. Wash the radishes and slice them into thin slices
6. Peel Avocado and chop
7. Get a large bowl, and begin assembling wild rice, rocket and vegetables – get creative!
8. Add the sesame seeds, 1-2tbsp of olive oil, 1/2 tbsp apple cider vinegar and some salt and pepper

Grilled Halloumi with Spicy Tomato Salsa

We’re big fans of Halloumi over at TGH HQ, which is probably because it’s an ingredient which instantly stops any vegetarian feeling like they’re missing out! We’ve put together this slightly spicy salsa and grilled halloumi recipe as a side dish or light lunch, but by adding either courgettes or aubergines (simply chop and add to the pan at the same time as the tomatoes), you’ll have one mean vegetarian dinner!

Ingredients
– 500g Tomatoes, chopped
– 2 Cloves of Garlic, minced
– 1 Onion, chopped
– 1 Chilli, finely sliced
– 1 tbsp Tomato Puree
– 1 tbsp Smoked Paprika
– 1 tbsp Turmeric
– 1 tsp Chilli Flakes (adjust accordingly)
– Salt and Pepper for seasoning
– Olive Oil
– 200g Halloumi, sliced
– Rocket Leaves, to serve

Method
1. Fry Onions on a medium heat in olive oil for a few minutes before adding garlic
2. Once they’ve both softened, add tomatoes, chilli, tomato puree and the spices
3. Cook on a medium heat for 15 minutes
4. Heat the grill to a high heat, then grill sliced halloumi for a few minutes until the cheese has browned
5. Serve warm with rocket leaves
