Stir-Fry Week

It’s definitely stir-fry week when you’ve got mangetout. spring onions and carrots in the box, throw in some noodles if you like and try it with garlicwith mint, with chicken, with chicken and eggs, with sticky honey lemon pork, with chilli sesame pork, you get the idea. Jamie Oliver also has this brilliant hungover noodles recipe which makes use of your broccoli also. Or try your new potatoes with mangetout, flavoured with chilli and rosemary.

Need some ideas for  your courgettes (which by the way are now from Kent instead of Spain)? Why not try courgette bread (or bake them as muffins instead). No mixer required, just a good ol’ wooden spoon. Like banana bread, it’s really a spiced cake, probably healthy enough (at least compared to coco pops) even for breakfast. Or for “proper cake” try this chocolate courgette cake.

Thank goodness LoveBox is now over and we can (too slowly) get our beloved Vic Park back. On the local festival line-up front Shuffle Festival is now here with an absolutely fantastic line-up! The nature walks are highly recommended (go batty with the bat walk) and check out the Village Feast which is free to Tower Hamlets residents, the treehouse lunches and dinners which may include locally foraged ingredients, cheese talk and tasting, hip hop and disco and of course all the glorious films (£5 tickets for E3 residents).

Shuffle works very closely with THCP and transforms it into a truly magical place…hopefully the fairy lights would be back along with more quirky art exhibits amongst the woods. Or go completely dark and quiet on the bat walk. And of course, watching movies in the open on a summer night’s is truly an experience in its own class.

Purple Mangetout Salad

The current heatwave is begging for a salad so here’s a variation on the Asian theme for purple mangetout.

Time Preparing: 10 mins
Time Cooking: 5 mins
Serves: 2
Difficulty: 2/5
Season: Summer

Ingredients
– 150g Mangetout
– 1/4 Cucumber
– 1 Bunch of Spring Onions
– Grated Zest and Juice of Lime
– Handful of Mint, chopped
– 1 tsp Brown Sugar
– 1 tsp Soya Sauce

Method
1. Boil mangetout for around 3 mins
2. In the meantime, simply mix all the ingredients for the dressing together. Feel free to vary the ingredients to taste and to suit. For example, add some chopped fresh chilli to make it extra zingy
4. Finely chop spring onion and cucumber, before mixing with the mangetout and dressing
