Going Stir (fry) Crazy

We don’t know about you, but we’re thrilled that Autumn is now approaching and with that hopefully some slightly cooler weather. As much as we’ve loved this summer and the gorgeous veg we’ve been getting, we’ll certainly relish less humidity!

So, as the new season is upon us, the farm is promising some autumnal goodies in the form of Rhubarb, Squashes, Golden Beetroot, Garlic, Ginger, Pears and Plums!

This weeks box includes some great ingredients to make a cabbage & pepper stir fry. The great thing about a stir fry is that you can practically chuck anything in, and it will still taste great (although we particularly love this combination)!

What you’ll need:
– Cabbage, peppers and green onions (from box)
– 4tsp Soya sauce
– 3tsp honey
– 1 lime
– Splash of dry sherry
– Sesame (or vegetable) oil
– Chili flakes
– Chicken or Tofu
– Rice or noodles

Pre-prepare either the rice or noodles and chicken or tofu. Add the oil to a wok and set on high heat.
Whilst the oil is bubbling, slice the peppers and cabbage into thin slices along with your green onions. Chuck your veg and chili flakes into the wok and set about making your stir fry sauce. Simply mix the honey, soya sauce and lime juice before stirring well. Add the sauce along with a splash of sherry before adding your meat/tofu.

This whole dish should be done in half an hour from start to finish so is a great way to create something special when you’re in a rush.

The Olympics is well and truly under way, and Great Britain are enjoying winning gold after gold, currently placing us in second place. Max Whitlock is GB’s pummel horse underdog, winning two Olympic Gold medals for his outstanding routines.

Get Stuffed!

This weeks box includes bell peppers which are fantastic when stuffed!

We’ve come up with a healthy and flavoursome twist on this classic Mediterranean dish, which uses three of the ingredients from your box!

To begin, cut the peppers in half and scoop out any of the seeds and white membrane. Drizzle with a splash of olive oil and bake for approximately 20 minutes – just until the peppers are tender.
Whilst the peppers are baking, fry onions and cashews for around 5 minutes, before adding some crushed garlic and sundried tomatoes for another minute. Add some kale from your box with a little water and cook for a further 2 minutes.
Finally, add in some cooked quiona or cous cous, some lentils then fill your peppers with your mix. Cook for a further ten minutes then serve with salad.

After last weekends Roman Road Festival, all seems pretty quiet in Tower Hamlets this week, but as the weather is set to remain mild and dry, it’s a great weekend to wander down our canals or head to one of our parks!

We’ve Fig-ured It Out!

Guess what? TGH is going to continue, woo hoo! We’ve found someone to keep it going, but do bear with us over the next little while whilst we transition and fig-ure it all out. And many thanks to those of you who indicated willingness to volunteer in one way or another. We may just call on you one day =) So looks like we should be doing better post Veg-xit than post Brexit…not that that would have been very difficult!

Shuffle Festival is on this Saturday at the Tower Hamlets  Cemetery Park for just 24 hours, unlike the week-long film of previous years, perfect plan for the weekend now that summer has finally decided to show up. And check out the Shuffle restaurant for an authentic Indonesian three-course feast by Indonesian extraordinaires Ayam Happy where you can look forward to dining with views of the dense jungle-like surrounds of the park and participate in the ongoing restoration of the historic lodge building in this urban oasis. And cap it off with a post-dinner evening walk.

Now onto the figs which we are having for the first time in our boxes…did you know that strictly speaking, figs are not really a fruit at all? They are actually a cluster of more than a thousand tiny flowers that blossom unseen beneath the silky skin and then go on to produce the “fruitlets”, or seeds.

Try roasting the figs by cutting an X into the top of each fig and squeezing it gently to open it up. Trickle a little honey into each fig then roast at 200 deg C for 10-15 minutes, until hot and bubbling. Or grill them with nuts to a yield delicious sticky cinnamon figs. Serve with thick Greek yoghurt and honey. Or make it in advance into jam and have it with your yoghurt and granola for breakfast.

They can also be poached, potted, baked in pies and pastries, or turned into chutneys. They team up very well with a wide variety of other ingredients, too: try them with fresh young goat’s cheeses, but they’ll also hold their own with stronger stuff such as salty prosciutto, punchy, tangy blue cheeses and even anchovies. If you still need more ideas check out these 27 delicious ways to eat fresh figs.

Remain or Veg-xit?

Many thanks to those of who responded to our call for volunteers to help keep TGH going. We will keep you posted, but we are still working towards a “Remain” rather than a “Veg-xit”. If there is any more interest in volunteering to keep TGH going do let us know!

The other subject of great importance British at the moment, need we say, is undoubtedly the weather. Summer solstice has come and gone but we are staring down streams of rain rather than streams of sunshine, grey evenings rather than long summer days, splashing in puddles rather than lidos, and wellies rather than flip flops…

Which means that an easy sweetheart cabbage soup or a simple cabbage and bean soup is definitely in order! And how about a Russian beetroot and cabbage borsch or a beetroot and orange soup with dill cream?

Calling for Volunteers…

Some news update: the person who started and has been running Tower Green Hamlets will be leaving UK in about a month’s time, so we are looking for volunteers to enable TGH to keep going. There have been a few folks who have put their hands up which we are exploring, but it would be great to have a few more so please do let us know if you can help in any way at all. If we don’t manage to transition over the next month then we may just have to wind TGH up, boo hoo! So please do let us know.

Onto the veg: we have the first of the British squash in the box this week. There is always courgette bread you can make when you don’t know what else to do with it, but why not bake it stuffed with olives, tomatoes, and mozzarella? Or making a French-style savory breakfast cake? What about a hearty chickpea salad with shredded courgette, mint, and feta? There’s courgette “butter,” and a spread with courgette and yoghurt. As for the rest of the box, lots of lovely salad material – perfect for a Father’s Day barbeque on Sunday – if the dry weather forecast for the day is to be believed given the wettest June on record!

It also appears that all the boxes that should have gotten potatoes ended up getting a veg item instead of potatoes so we are looking into what happened. Apologies, if you are without your spuds for this week.

Happy Birthday Our Dear Queen!

We won’t be writing much on the produce this week, apart from an apology to small-box folk that we managed to count an extra veg item as a fruit this week…we’re getting all set for celebrating the last weekend of HM Queen’s 90th birthday. Why not join in the tea party and fun day at the Roman Road Yard Market.

It you haven’t been an Eastender for life then apparently street parties have been an East End tradition for over a hundred years and join right in to bring back their spirit this Saturday with sandwiches and cake, tea and squash, free craft workshops, plus a Right Royal Bake off with some fantastic local prizes to be won.

So why not come make the most of your rhubarb and make the beautiful rhubarb custard tea cake for a definite prize contender. Or make an apple crumble cake – it’s a truly juicy and luscious with yummy crumble topping, very easy to make and always moist. Or even make use of your beetroot to make some beetroot brownies, with around half the fat of regular ones, but still with that intense chocolate hit!

And on Sunday 12th June hop over to the Big Lunch Birthday at Stepney City Farm (bring a dish to share if you can) to celebrate 6 years of the farm with a communal picnic to remember. And you can have another crack at winning best cake and best jam / chutney.

There’s loads of activities planned: meet and greet the animals, have a go at swing dancing and watch performances by the awesome Swing Patrol dance group, hear from the lead archaeologist of the Crossrail Dig at Stepney Green about history of the site and recent unearthings, take part in a planting workshop, join in the treasure hunt and decorate your own cake. Plus take part in the Farm Olympics from 2pm, featuring the egg and spoon race, sack race, three legged race and more!

Why call an aubergine an eggplant?!?

The vegetable which is native to the Indian subcontinent and first appeared in England in the late 1500s, however the word “aubergine” is actually borrowed from the French. (The Germans adopted it too; the Brits aren’t the only ones with no imagination.) The U.S. term “eggplant” dates from the middle of the 18th century and is named after the white and yellow versions of the vegetable, which as whoever coined the word noted, resemble goose eggs.

We won’t be getting those alternative-coloured versions but in any case they make a pair in heaven with chickpeas. So why not try making a classic Moroccan aubergine and chickpea stew or for a twist add some tamarind also, or a Middle Eastern casserole. Or a curry would be perfect either with coconut milk (here with curry leaves and garam masala, or use Thai red curry paste for a different base), with a yoghurt base instead or a with a tomato base. Perfect for the current chilly conditions in err…June…

One of our favourite tried and tested recipes is baked stuffed aubergine, stuffed with quinoa and topped with za’atar. Use tiny dollops of cream cheese instead if you don’t have/like feta. And definitely check out Guardian’s Top 10 aubergine recipes with more curry, pasta pie, soup, risotto, moussaka and tagine suggestions.

And for local events definitely check out the Tower Hamlets Cemetery Park summer fair this Saturday between 12pm and 5pm.

It’s Looking Like…

Dare we say it? Well, it’s definitely looking a lot more like a summery box. Lots in the box for that perfect salad. And if the weather holds up, maybe it could just be time to get out barbie and put those red onions to work for the Bank holiday weekend…

Failing which, it’s always worth making a pickle out of the red onions. Here’s a guide to quick-pickled red onions (yes, just 10 minutes really) or try an oregano and cumin spiced Yucatan Mexicana version.

And why bother? Well to quote: “There are countless uses for pickled onions. Tuck them into sandwiches, especially those with rich meats, like pulled pork; use them as a condiment to top tacos, bean dishes, and rich mayo-based salads, like potato or egg salad; toss them into lettuce salads, grain salads, and salads with sturdy greens, like kale. Their bright-pink color, crunchy texture, and piquant flavor will perk up almost any dish. They’re also perfect for serving with sandwich and salad buffets at parties.”

It’s rhubarb, not blood shot celery!!!

A big welcome to our standard veg boxes this week is rhubarb. Hopefully most of you won’t have much problems differentiating between your celery and your rhubarb this week. We are also coming into the “Hungry Gap” where UK over-winter produce is scarcer whilst the new season’s produce is not quite ready yet…

Dessert ideas for rhubarb are a dime and dozen but what about eating it as part of your main meal? (Yes, it’s one of your veg items this week). Check out the Guardian’s 10 best recipes for rhubarb and try the Vietnamese sweet and sour soup.

And there are lots of wonderful ideas both sweet and savoury on Telegraph article. Apart from the usual cake, pudding, tart and streusel (and all of these are on the link) try it as a pickle, hummus or wine. But the dessert options like rose-scented panna cotta with rhubarb compote and rhubarb frangipane tart comes out tops for us.

For those of you with the yummy peaches why not make a peach and rhubarb crisp (add a kick with some chopped crystallised ginger) or a peach and rhubarb cobbler? Both are variations of the try and tested crumble.
