We know they may not look very tasty at first glance, and wouldn’t be surprised if some of you have discarded the beet greens, BUT…
Did you know that the greens of Golden Beets can and should be eaten 🌱🌱
They generous amounts of vitamins, and have twice the amount of potassium than the beets themselves!
To store, cut the stems about two inches from the root and store in water for up to two days.
(Warning: gypsophila not edible!)
We think Beet greens are best eaten when sautéed with garlic, onion and olive oil before being served with roasted beetroot.
