We hope you enjoyed last week’s Jerusalem artichokes! And we’ve got some colour vegetables to add a splash of colour to brighten your grey winter days – rainbow carrots, purple kohl rabi (even if these are not purple on the inside) and candy striped chioggia beetroots.
Now, on what to do with the vegetables in your box here are a few ideas from our past newsletters/blog posts and few fresh ones too:
- Rainbow Carrots – There will probably be yellow and maybe red carrots (and sometimes white ones too) added to the usual mix of purple and orange carrots. Make the most of their colour with a rainbow carrot ribbon salad (photo above).
- Celeriac – Check out our past Rooting for Roots write-up. Try celeriac potato mash (great for sneaking vegetables in on the kids) or the classic French remoulade, or simply cut into chunks and roast for about 40 mins along with your rainbow carrots to go with your Sunday roast! Or how about a celeriac, potato and rosemary gratin (works with creme fraiche and stock instead of milk and double cream) also, or Jamie Oliver’s cheesy thick-cut version
- Chioggia Beetroot – Lots of fun facts and eating ideas on these lovely beetroots on our From Golden to Stripy post
- Kohl Rabi – Enjoy these little purple sputniks with some of the suggestions in Kohl Rabi Kohl Slaw
- Spring Greens – Cook them as you would other greens (read our past post for more options) or try some white bean, bacon/cheese and spring bean cakes
