Some of you may be in the midst of back-to-school haze whilst the rest of us may be blissfully unaware. For those of you in the midst of this haze, here are some Purple Haze carrots to go with it!
Whilst today purple carrots are a heritage breed, did you know that the origins of the cultivated variety are rooted in purple carrots in the region around modern day Afghanistan?
Most of us probably won’t feel like you need to read a definitive guide to the history of carrots, (or how carrots ended up orange) and would just like to get on with how to cook these purple gems, but here’s a brilliant article with both a few fun facts on carrot history and how to go about roasting purple carrots with thyme. It may even whet your appetite for more carrot fun facts. Or have a go at roasting with rosemary and garlic instead.
